Chocolate Chia Seed Pudding
Chia seeds water-binding properties and high fibre content makes this the perfect nutrient-dense and filling dessert/snack.
One ounce (about 2 tablespoons) contains 139 calories, 4 grams of protein, 9 grams fat, 12 grams carbohydrates and 11 grams of fibre, plus vitamins and minerals.
Recipe
(Makes 2 Servings)
INGREDIENTS:
3/4 cup any milk, unsweetened (cashew/almond/coconut)
2 tsp honey or maple syrup (if vegan)
1 tsp pure vanilla extract
3 – 4 tbsp chia seeds ( I used 4)
1 tbsp cacao powder ( I used organic baking cocoa by Rodelle organics)
INSTRUCTIONS:
Take a 250 ml mason jar add milk, maple syrup and vanilla and stir well.
Now add in the chia seeds and cacao powder.
Using a fork, whisk really well until the cacao powder and chia seeds have combined with the liquid.
Let it rest for 5-10 minutes and then stir it again.
Place it in the fridge for 4-6 hours or overnight.
Top it up with 70% dark chocolate shavings (optional) (You can use regular 1% milk if you are not vegan).
